In honor of sweet, sweet summer, we’re declaring this week Popsicle Palooza! You heard us… we’re dedicating an entire week of posts to our favorite magical summertime treat! After curating post after post of amazing recipes, we have to tell you: we’re taking things to the next level. In honor of amazing YOU, our first post is all about our favorite popsicles for #adulting. From coffee to booze, these popsicles are for all the weekend warriors out there! So, clear some room out in the freezer, because things are about to get serious!
Preview from How Sweet It Is: “I expected these popsicles to taste pretty good given my love for the cocktail, but I was not expecting to love them as much as I did. Like straight up, could-not-stop-eating love. At the moment, I can’t think of one other thing that would be more satisfying and thirst-quenching on a hot summer day.”
Preview from Half Baked Harvest: “Just like the tea, these popsicle are so easy to make. The hardest part is waiting for them to actually freeze, but the rest is so simple! My original idea was to make these popsicles with a Honeysuckle, Hibiscus and Watermelon flavor, but unfortunately, I couldn’t find honeysuckle. So I subbed in ginger and fortunately it worked out great.”

These Irish Coffee Popsicles have three layers, a soft vanilla bean cream layer, a smooth dark coffee layer and a creamy coffee layer with Bailey’s. They are winners."
